  • 1 teaspoon honey

Method

Muddle the mint leaves and combine with the honey and lemon juice in a freezer-safe container. Add the rum and stir, then add the seltzer.

Freeze the mixture until solid, then use a spoon to scrape off shavings. Serve with the rice pudding.
