My recipe is based on one from Lorraine at Cafelolz, Kirkwall, Orkney. Lorraine Pilkington-Tait, also known as Lol, hence the café name, was born and bred in Stenness on the mainland of Orkney, then worked for in the hospitality industry all over Scotland. She is a self-taught baker and cook and opened Cafelolz in 2000.
