For this you can use half cream, half buttermilk to give it a lovely tang; or add a squeeze of lemon at the end instead. Ensure you use as fresh a clove of garlic as possible, not an old stale clove, as that taste will linger.

I like to serve it either with wholemeal toast or with Shetland’s wonderful Oceanic oatcakes, baked in the most northerly Shetland island, Unst. They are made with oatmeal and sea water.

Shetland’s Thule Ventus company sells the salt cod in 50g or 250g
