Here is Jim McFarlane’s famous crab sandwich. To cook his crab, Jim recommends placing in cold water, then slowly bringing it to the boil. This prevents the claws from being cast, which happens if they are plunged directly, as you do for lobsters, into boiling water.

Ingredients

  • 2 slices of brown bread, buttered
  • About 90 g crabmeat (half

Method

Spread one slice of bread with the brown meat, then white meat if using, and lay the salmon on top. Give a good squeeze of lemon all over, then, if using, smear a little horseradish on the other slice of bread before clamping this onto on the lower slice, cutting and devouring. Hungrily.
