Farofa is a wonderful Brazilian dish that is usually served with the fabulous pork and bean casserole, Feiojada. I loved eating farofa on my visits to Rio or Sao Paulo as, strangely, it reminded me in texture of skirlie. Instead of being made from oatmeal and fried in dripping, however, farofa is made from cassava flour and fried in dende (palm oil) until nutty and toasty.
