This delicious recipe was inspired by a recipe I saw in a magazine for rhubarb cooked with sugar and with an oaty cream topping. I have introduced honey and vanilla, both of which go so well with rhubarb. The result? Gloriously pink rhubarb cooked to spoon-tenderness with honey and vanilla, and topped with the crunchiest of oaty cobbles.
