This recipe from Fiord Corbett was given to her by her great friend Mag Macbeth, who is the Corbett family’s general lifesaver and house-sitter extraordinaire. It goes down a treat at the Old Post Office at Lochbuie.

Ingredients

  • 350 g self-raising flour
  • 285 g demerara sugar and extra for sprinkling

Method

Put everything in a bowl and mix well, then press into a buttered 23 x 33cm baking tray and sprinkle with a little more demerara sugar.

Bake at 180C/350F/Gas 4 for about 20 minutes until firm, then remove and allow to cool completely before cutti
