Bo Simmons’ Gluten-free Apple Cake

Since moving to Shetland nearly 30 years ago, Bo Simmons has become something of a culinary legend. With her husband Henry Anderton, they ran the fabulous Burrastow House which, during the 18 years they had the hotel, became famous throughout Scotland for its food. She trained as a chef and has always been passionate about good locally sourced food.
