My recipe is based on Sheldgh Reade’s;
Do not even think about adding salt or other flavouring, as farmhouse cheese has enough superb taste all by itself. When not serving with the very obvious cheese and pickle - or soup or salad - I also like to serve them with slivers of Mull cheddar and thin slices of quince paste (membrillo).
