My recipe is based on Sheldgh Reade’s; Sheldgh, married to Brendan Reade, makes her cheesy oatcakes for the farm shop on Midi during the busy summer months.

Do not even think about adding salt or other flavouring, as farmhouse cheese has enough superb taste all by itself. When not serving with the very obvious cheese and pickle - or soup or salad - I also like to serve them with slivers of Mull cheddar and thin slices of quince paste (membrillo).
