I made this in our rented house on Scalpay using fabulous eggs from Anna’s Honesty Box along the road. The same eggs are used in George Lavery’s kitchen at the Scalpay bistro. I used the Eastwoods’ Isle of Lewis Breibhig Tom cheese, but any other washed curd, hard, easy-melting goat’s cheese will do.

I like to eat this with some good bread and a simple tomato salad, dressed with a light vinaigrette.
