I have reduced the quantities in this divine yet easy recipe from Chris, who likes to serve it with shortbread and berries or seasonal fruit. He strains the mixture through a fine sieve, but I have eliminated this for the home cook.

Colonsay honey is also good in this; indeed use any good honey with a pleasantly floral taste.
