These sweet spiced buns, a hallmark of the Easter season, became popular in England in the seventeenth century, when rich yeast-risen doughs were in vogue. Perhaps even more commonly enjoyed for breakfast than for afternoon tea, hot cross buns were a staple of the Downton tables, both upstairs and downstairs, and were regularly seen cooling in Mrs. Patmore’s kitchen.
