Also known as ginger nuts, these hard spiced biscuits (aka cookies) have been popular in Britain since the 1840s. Although similarly spiced, they are quite different from gingerbread, which is thicker and has a softer, breadlike texture. These no-frill sweets emerge from the oven quite soft but harden on cooling, making them perfect for dunking into a hot cup of afternoon tea.
