John Murrell’s A Daily Exercise for Ladies and Gentlewomen, published in London in 1617, includes a recipe for the French macaron, a small, sweet confection made from Jordan almonds, rose water, sugar, egg whites, and ambergris. But more than two centuries would pass before French bakers began sandwiching a filling between two meringue-based macarons, creating the macaron parisien popular today.
