In the 1870s, afternoon tea at home was enjoyed by both the rich and the poor, with the lower classes especially keen to take up a custom that was enjoyed by the gentry. By the Edwardian period, tearooms were popping up everywhere, and afternoon tea was no longer something done only at home. The sweets at these new outposts varied according to how fancy the surroundings were. This classic nut torte would not have been out of place in the finest tearooms.
