Bouchée, literally “mouthful,” is a French pastry with a savory or sweet filling. According to legend, these rich, flaky pastries were created in the palace kitchen of Louis XV at the request of Queen Marie and made their way to the finest tables of neighboring Britain, as evidenced by Alfred’s making a batch of them in season 4 of Downton.
