Unlike jams, which are thick and spoonable, jellies are smooth, clear spreads from which all of the fruit solids have been strained. Fresh currants are a favorite jelly ingredient, as they naturally possess the perfect amount of pectin and acidity, ensuring both a good gel without the addition of commercial pectin and a color as brilliant as the fruit.
