Ingredients

  • 3 garlic cloves, peeled and finely chopped
  • 3 or 4 aubergines (depending on size), topped and tailed, partly peeled and sliced
  • 115 g

Method

  1. Heat some oil in a heavy-based wok or frying pan and quickly fry the garlic until very light brown.
  2. Add the aubergines and tofu and cook for another 5–7 minutes, turning to brown all sides.
  3. Add all the remaining ingredients and mix gently to heat through. Serve immediately.
