Most samosas are deep-fried. These are baked, making them a healthier option. They are also perfect for parties, since the pastries need no last-minute attention.

Ingredients

  • 1 large potato, about 250g/9oz, diced
  • 15 ml/1 tbsp groundnut (peanut) oil

Method

  1. Preheat the oven to 220°C/425°F/Gas 7. Bring a small pan of water to the boil, add the diced potato, cover and cook for 10-15 minut
