Noodles make the perfect basis for a salad, absorbing the dressing and providing a contrast in texture to the crisp vegetables.


  • 200 g/7 oz thin rice noodles

  1. Bring a large pan of lightly salted water to the boil. Snap the noodles into short lengths, add to the pan and cook for 3–4 minutes. Drain, then rinse under cold water and drain again.
