In Thailand, this chicken would be spit roasted, as ovens are seldom used. However, it works very well as a conventional roast. The sweet potatoes are an inspired addition.

Ingredients

  • 4 garlic cloves, 2 finely chopped and 2 bruised but left whole
  • small bunch coriander (cilantro), with roots, coarsely chopped

Method

  1. Preheat the oven to 190°C/375°F/Gas 5. Calculate the cooking time for the chicken, allowing 20 minutes per 500g/1¼lb
