Tofu and Vegetable Thai Curry

Traditional Thai ingredients – chillies, galangal, lemon grass and kaffir lime leaves – give this curry a wonderfully fragrant aroma. The tofu needs to marinate for at least 2 hours, so bear this in mind when timing your meal.

Ingredients

  • 175 g/6 oz firm tofu
  • 45 ml/3

Method

  1. Rinse and drain the tofu. Using a sharp knife, cut it into 2.5cm/1 in cubes. Place the cubes in an ovenproof dish that is large enough to hold them all in a single layer.
  2. Mix together the soy sauce, sesame oil, chilli sauce and grated ginger in a jug (pitcher) and pour over the tofu. Toss gently to coat all the cubes evenly, cover with clear film (plastic wrap)
