A wonderfully simple way of serving noodles, this dish allow search individual diner to season their own, sprinkling over the four flavours as they like. Flavourings are always put out in little bowls whenever noodles are served.


  • 4 small fresh red or green chillies
  • 60 ml/4 tbsp Thai fish sauce


  1. Prepare the four flavours. For the first, finely chop 2 small red or green chillies, discarding the seeds or leaving them in, depending on how hot you like your flavouring. Place them in a small bowl and add the Thai fish sauce.
  2. For the second flavour, chop the remaining chillies finely and mix them with the rice vinegar in a small bowl. Put the sugar and chill
