This dish makes an interesting accompaniment to grilled meat or strongly flavoured fish such as tuna or swordfish. If the idea seems strange, think of it as resembling a fresh mango chutney, but with pineapple as the principal ingredient.

Ingredients

  • 1 pineapple
  • 15 ml/1 tbsp vegetable oil
  • 2

Method

  1. Trim and peel the pineapple. Cut out the core and dice the flesh.

  2. Heat the oil in a wok or frying pan. Stir-fry the garlic and shallots over a medium heat for 2–3 minutes, until golden. Do not let the garlic burn or the dish will taste bitt
