Canned mangoes are used here for convenience, but the dish tastes even better if made with fresh ones. Choose a variety like the voluptuous Alphonso mango, which is wonderfully fragrant and tastes indescribably delicious.

Ingredients

  • 400 g/14 oz can sliced mango
  • grated rind of 1 lime
  • juice of

Method

  1. Drain the canned mango slices and put them in the bowl of a food processor. Add the grated lime rind and the lime juice. Process until the mixture forms a smooth purée. Alternatively, mash the mango slices with a potato masher, then press through a sieve into a bowl with the back of a wooden spoon. Stir in the lime rind and juice.
