A very simple and quick Thai dessert – pineapple fried in butter, brown sugar and lime juice, and sprinkled with toasted coconut. The slightly sharp taste of the fruit makes this a very refreshing treat at the end of a meal.


  • 1 pineapple
  • 40 g/ oz/3 tbsp


  1. Using a sharp knife, cut the top off the pineapple and peel off the skin, taking care to remove the eyes. Cut the pineapple in half and remove and discard the woody core. Cut the flesh lengthways into 1cm/½ in wedges.
