Although it sounds trendy, oyster stuffing has been traditional Thanksgiving fare for a very long time. We found it in some cookbooks published in the late nineteenth century. This version adds a few twists, including corn bread and Paul Prudhomme’s idea of prebaking the stuffing before putting it into the bird. This gives it a deep mahogany color.
