Place the first seven ingredients in a large stockpot, and add the cold water. Bring to a boil, reduce heat, and simmer. Skim the surface of the stock occasionally during the first 30 minutes.
Partially cover and continue to simmer for 3 to 5 hours.
Strain and salt to taste.
