  • 2 pounds turkey parts and giblets
  • 1 onion, quartered
  • 2 carrots, cut in 3-inch p

Method

  1. Place the first seven ingredients in a large stockpot, and add the cold water. Bring to a boil, reduce heat, and simmer. Skim the surface of the stock occasionally during the first 30 minutes.

  2. Partially cover and continue to simmer for 3 to 5 hours.

  3. Strain and salt to taste.
