  • 5 sweet potatoes (about 2½ pounds)
  • 4 tablespoons unsalted butter, cut in pieces

Method

  1. Peel the sweet potatoes and place them in a pot. Cover with lightly salted water and place over medium heat. Boil until a fork pierces the potatoes without resistance—about 20 minutes. Drain.
  2. At this point, you can mash the potatoes with a potato ricer, or transfer them to a food processor fitted with the metal blade. In either case, alternately add the butter
