This flavored vinegar is useful in many holiday recipes (substitute it anywhere berry vinegar is called for). It adds a unique Thanksgiving character to many dishes.
Place the cranberries in a clean, lidded quart bottle. Heat the vinegar over moderate heat. When it comes to a boil, pour it over the cranberries.
Let the mixture cool and then screw on the lid. Place the jar in a sunny spot and leave it undisturbed for at least a week—preferably several weeks. (We have found the optimum time is about 5 weeks.)
