Martha Pearl's Buttermilk Biscuits

Martha Pearl Villas—food writer Jim Villas’s mother—is perhaps the best native Southern cook we have ever met. Her fried chicken is so good that only the hot biscuits that are served alongside can compete.

We like these with Thanksgiving dinner because they are easy to make and are a perfect contrast to the richer textures and flavors of the rest of the meal. The recipe can be doubled.
