This is a cool and refreshing dessert that is also richly flavored. It is a fine alternative to pumpkin pie if you want to have a dessert that contrasts with the other pies on your holiday table.
In a small saucepan, melt ½ cup sugar over medium-low heat until it caramelizes into an amber syrup. Stir continuously to prevent burning. Pour into a 9-inch pie plate. Pick the plate up and tip it from side to side to coat its bottom with caramel.
