You couldn’t ask for a simpler recipe than this, and the result is nothing snort of sensational. This ragout is particularly delicious made with goose and Savory Wild Rice Stuffing, but it would work almost as well with turkey or other poultry. The proportions can be varied.

Ingredients

  • 3 cups goose meat, from the legs, wings, and the carcass, cut into ¾-inch chunks, turkey (preferably dark meat), or chicken

Method

  1. Sauté the goose chunks in a skillet for 5 minutes. The fattiness of goose should make it unnecessary to add fat to the pan. (If, however, you are using turkey or other poultry, add 1 tablespoon vegetable oil to the skillet.)
  2. Transfer the meat to a double boiler and stir in the stuffing and gravy. Place over moderate heat for 15 minutes or until warmed through.
