We don’t usually have mashed potatoes left over, especially if Toby’s friend Barrett is on hand for the Thanksgiving dinner. But if there are some left, here is what we do with them. Our oldest daughter Caitlin likes these better than the mashed potatoes in their original form.
In a medium bowl combine potatoes, butter, matzo meal, chives, salt, and pepper. Beat the eggs well and add all but 2 teaspoons to the mixture. With a fork, stir the potato mixture well to blend thoroughly.
