This is another classic French cheese snack dish. It takes its name from the fact that it is, in reality, a bifteck of French Alpine Gruyère cheese cut in the shape of a ½-inch-thick slab about the size of a filet mignon, covered with a fritter batter and baked, fried or grilled until the cheese is almost melting, so that it is rich and unctuous in the mouth.
