Bake the 4 potatoes in their skins in your favorite way. (At the Auberge and in my New York kitchen, the potatoes are baked in a handmade ceramic diable made of unglazed pottery, which takes about 2 hours, but draws the moisture out of the potatoes, so that they are wonderfully fluffy, with the flavor concentrated.
