Excellent whenever the endive is in season–usually from October through April (menu with wines). The Salade de Cornette of the Alps is not exactly the same variety as the Belgian endive imported into the United States, but the general ambiance of this salad as we can make it here is almost exactly the same, as they are very close–both members of the chicorée, chicory, family.
