This cake evolved from the Charente Bavarois dessert. I modified the filling slightly to make it possible to slice the cake into clean attractive servings. For a slightly different and more contemporary look, use a ladyfinger comb to distribute the ladyfinger batter as shown in the procedure photos. A ladyfinger comb is a tool 22 inches long x 4 inches wide (55 x 10 cm) with half-sphere indentations on one of the long sides and pointed notches on the other
