This is a great do-ahead cake. Although the cakes cannot be frozen because of the bananas, they can be refrigerated for up to three days after completing Step 5. Finishing each cake as needed goes quickly after that point. Chocolate Mousse Cake with Banana makes an elegant substitute for the ordinary chocolate mousse station at a brunch or luncheon buffet.
