The elegant look of this finished cake makes it well worth the extra steps. One ribbon sponge sheet is enough to make up to six cakes, but it doesn’t make sense to make less than half of the recipe at a time. Besides, the leftover sheet can be stored in the freezer, well covered, for weeks and can be used for many other projects. For a different look, finish the tops of the cakes with a spiral of whipped cream piped to cover the entire surface; you will need twice as much cream and sugar. D
