At first glance, Chocolate Truffle Cake with Raspberries may appear too rich, too expensive, and too time-consuming for anything other than a very special occasion. But considering that this dessert keeps fresh for up to four days and that each cake can be cut into 16 servings, the time and expense are certainly justified. Also, the number of steps can be decreased by omitting the chocolate collar and leaving the sides of the cake plain (take extra care when icing the sides, in this case).
