Use a plain round cookie cutter, 1 inch (2.5 cm) in diameter, to mark rings in the flour on the prepared sheet pan. This is a convenient way to gauge size as you pipe and ensures that the cookies will be uniform. Do not use baking paper or Silpats or the cookies will spread and become too flat.
