This type of cookie is popular in Europe, and even though it is not really a petit four sec, the color can really enliven the cookie tray. Macaroon Candies are often referred to as almond paste petits fours. Leave out more egg white than usual when you make the macaroon decorating paste. The paste will be too firm to pipe but, if you use the warming method to soften it rather than add egg whites, the cookies will spread less while they bake.
