It is of the utmost importance that the puff pastry be rolled out as thin as is specified when making Miniature Palm Leaves. If the folded layers are too thick, the cut cookies will be too wide, and the layers will tear apart as they expand in the oven. An easy way around this, but one that produces a less intricate cookie, is to omit folding the strip in half crosswise, which gives you just a double turn instead. You should still make the indentation before folding the strip in half length
