This recipe makes more than you need for the bread pudding, but streusel is convenient to have on hand, as it has so many applications. You might actually want to double or triple the recipe and keep the streusel in stock as a regular mise en place item. Chopped nuts may be added for variation.

  • 2 ounces (55 g) light brown sugar

Method

  1. Mix the brown sugar, granulated sugar, butter, cinnamon, salt, and vanilla.
  2. Stir in the flour. The mixture should be crumbly and should not come together like a dough; you may need to add extra flour.
  3. Store, covered, in the refrigerator to prevent the topping from drying out.
