Marjolaine, one of the great modern classic desserts, is the best-known dish invented by the late French chef Fernand Point, owner of the three-star restaurant La Pyramide outside of Lyons. It is an unctuously rich creation that alternates moist chocolate sponge cake, crisp nut meringue (dacquoise), praline-flavored buttercream, chocolate whipped cream, and rich chocolate ganache. Many versions have evolved over the years; this is mine.
