Buttercream tends to break when liquid is added, especially when the buttercream is cold. Should this happen, stir the mixture over a bain-marie until it is smooth.

Method

  1. Mix a small amount of buttercream into the hazelnut paste to soften it.
  2. Mix the tempered hazelnut paste into the remaining buttercream and add the coffee flavoring. Continue to mix until smooth.
