Like many popular dessert creations, Vacherin has many variations, all of which combine meringue with ice cream, whipped cream, or both. One simple but delicious example is Meringue Glacé Chantilly (recipe follows). The classic rendition of Vacherin consists of two or three crisp meringue rings (or rings made from almond macaroon paste) stacked on top of one another and placed on a meringue base to make a decorative edible bowl.
