If this ice cream will be eaten the same day it is made, skip the macerating step. If the peaches are tree-ripened or perfectly ripe, you can omit pureeing them as well. But do include the amaretto. Peaches and almonds are made for each other. Peach ice cream is great for topping many pies and tarts à la mode, especially those that contain nuts.
